CREAMED BABY SPINACH

Ingredients
1 small onion, finely chopped
4 cloves garlic, finely chopped
500 g baby spinach, washed and dried
a pinch nutmeg
200 g sour cream
salt and pepper
1/2 lemon, zested, plus extra for squeezing
Cooking Instructions
In a large frying pan, saute the onion and garlic until soft and fragrant.
Add the spinach and nutmeg and allow the spinach to wilt.
Add the sour cream, lemon juice and season to taste then allow to cook for another minute.
Serve immediately.
