FRENCH PEASANT SOUP

Ingredients
1 medium onion, peeled and chopped
1 clove garlic, peeled and chopped
50g butter, melted
250ml streaky bacon, chopped
250ml raw white cabbage, chopped
250ml raw potato, chopped
250ml tinned, whole peeled tomatoes, chopped
125ml tomato puree (not paste)
45g white sugar
2 litres chicken/ vegetable stock
Salt, to taste
pepper, to taste
Cooking Instructions
Fry the onion and garlic in the butter until soft, then add the bacon.
Add the cabbage, potato and tomato, and sauté for a few minutes.
Add the chicken stock and tomato purée and simmer gently until vegetables are cooked.
Add the sugar and seasoning to taste.
