SEV BATATA DAHI PURI ( SBDP)

Eating SPDP is the perfect way to soothe your hunger. SPDP are a favourite with children as well as with grown ups. The curds have to be fresh and chilled and most importantly of the right consistency neither too thick or too thin.
Ingredients:
1 pkt Puffed up puris, available at super markets 1 potato (Medium sized, boiled, peeled & finely diced) 1 medium tomato (finely chopped) 1 medium onion (finely chopped) 3/4 cup curds (well beaten) Salt to taste Chat Masala to garnish green chutney to taste tamarind chutney to taste 1 cup thin sev chopped coriander leaves
Method:
1. To serve, first set up all ingredients - Puris, toppings and chutneys - within easy reach. 2. Add the desired amount of salt to the well-beaten Yogurt. 3. Take a wide serving plate. Place 5 -8 puris, depending on the size of the plate. 4. Crack a small hole in the centre of each puri on one side by giving a sharp tap with the index finger. 5. Fill it with chopped onion, tomato and potato. 6. Spoon some beaten curd mixture to cover the puri. 7. Drizzle it with green chutney & tamrind chutney to taste. 8. Sprinkle chat masala on the top. 9. Finish off with sev. 10. Garnish with fresh chopped coriander and serve immediately or the puris will get soggy.

* Green Chutney: 1/2 cup mint leaves, 1/2 cup coriander leaves, 1 green chillie, 1/4 " ginger, 1/2 tsp sugar or jaggery, salt to taste. Grind to a fine paste adding a few tsps of water.
