SPICY GRILLED CHICKEN SALAD WITH WATERMELON, GOAT’S CHEESE AND SPROUTS

Ingredients
2 chicken breasts, boneless, skinless and cut into strips
2 tsp smoked crushed chillies (alternatively use 1 tsp crushed chillies and 1 tsp smoked paprika)
4 tsp lime juice
extra virgin olive oil, plus extra for drizzling
Sea salt and freshly ground pepper, to taste
6 cups Ripe watermelon, cubed
100 g chevin goat's cheese
fresh wild rocket
vegetable sprouts, to garnish
lime wedges, for serving
organic olive oil, for drizzling
Cooking Instructions
Pre-heat a griddle pan over high heat.
Combine the paprika, cayenne pepper, lemon juice, olive oil and salt and pepper and brush over the chicken.
Grill the chicken until golden brown on both sides and cooked through, Remove from the pan and allow to rest for 5-10 minutes.
Place the wild rocket on a large plate then top with the watermelon, goat’s cheese and sprouts. Slice the chicken and place on the salad.
Dress with lime juice and olive oil and serve.
