Ingredients
150g vine cherry tomatoes, halved
1/2 red onion, grated
olive oil, to drizzle
3/4 cup castor sugar, plus extra for dipping the pastry shapes
3 tbsp red wine vinegar
Cooking Instructions
Halve the cherry tomatoes and chop the red onion.
Gently fry over a medium to high heat in the olive oil for 5 minutes, or until soft.
Reduce the heat and add the caster sugar and vinegar.
Simmer for 10 minutes until slightly reduced, season to taste.
