ASIAN CHICKEN WITH FRESH CORIANDER SALSA

Ingredients
8 pieces Free range chicken drumsticks and thighs
2 Red chillies
fresh coriander, to garnish
4 spring onions,finely sliced
3 Tbsp canola oil, plus extra for greasing
1 lemons,half juiced and zested
80 g brown sugar
2 Tbsp soya sauce
Cooking Instructions
Mix ¼ cup soya sauce, 1 T brown sugar, the juice of ½ lemon and 2 T canola oil.
Place 8 free-range chicken pieces in a tray, pour over the marinade and roast for 40 minutes at 180°C, basting occasionally.
Scatter with thinly sliced spring onion, fresh coriander and chopped chillies.
