Chicken Curry

Ingredients
10 pieces of chicken ( remove skin ) 6 - 8 potatoes peeled and cut into cubes 2 onions chopped finely 5 gloves of garlic peeled and grated on fine side of grater 1 big chunk of Ginger peeled and grated on fine side of grater 3 tablespoons of Roasted Masala ( I use Packo) 1 tablespoon of turmeric 1 tablespoon of paprika 3 bay leaves 1 stick cinnamon 2 cardamom pods 1 tablespoon of sugar 1 tablespoon of vinegar Salt to taste 1 tablespoon of vegetable oil for frying onions 1 cup of chopped coriander
Method
In a pot heat oil and add onions on medium heat , fry until golden brown , add one cup of warm water and cook onions till water has cooked away , now add all your spices , vinegar and sugar , fry for two minutes stirring constantly , now add your chicken , cook and stir for 5 minutes , add cubed potatoes and 2 cups of warm water and stir , cook on medium to high heat for 20-25 minutes or until potatoes are tender , stirring occasionally . Add chopped coriander . Serve with Roti or Rice . And a sambal .
