Sugar Bean Curry

Ingredients
10-15 pieces of red meat of your choice 1 packet of sugar beans ( the white speckled bean ) - soaked in water for a few hours or overnight , then cooked till soft . 3 onions chopped finely 1 tablespoon of vegetable oil Freshly grated garlic and Ginger 3 whole chillies 2 bay leaves Salt to taste 3 tablespoons of roasted masala ( I use Packo masala ) 1 tablespoon of turmeric 1 tablespoon of sugar 1 tablespoon of vinegar Chopped coriander ( optional )
Method
In a large pot heat oil and fry onions and meat till nice and brown , now add the garlic and Ginger , salt , whole chillies and bay leaves and some warm water and cook until meat is almost tender , now add all your spices , sugar and vinegar and Braise with the meat for 5 minutes , add cup of water and cook spices through for another 10 minutes . Now add the cooked sugar beans and two cups of water and cook on medium to high heat for half an hour stirring every 5-7 minutes to prevent food sticking to pot .
Serve with rice or roti and a yummy sambal .
