TROPICAL FRUIT SALAD WITH AVOCADO, ROASTED PISTACHIOS AND WHITE BALSAMIC AND LEMONGRASS

Ingredients
1 small pineapple, peeled and sliced
kiwi fruit, for garnishing
2 guavas, peeled and sliced into wedges
2 clementines, peeled and sliced into rings
1 grapefruit, peeled and segmented
8 litchis, peeled and stoned
8 granadillas, halved
4 limes, zested and juiced
2 ripe avocados,pureed
50 g shelled pistachios
A handful mint leaves, to serve
6 cups water
2 lemongrass stalks, roughly chopped
2 Tbsp white balsamic vinegar
2 granadillas,pulp removed
4 Tbsp Wild blossom honey
Cooking Instructions
Arrange the fruit on a serving platter. Drizzle over the granadilla pulp and lime juice.
Top with the avocado and sprinkle over the pistachios. Garnish with mint leaves and pour over the dressing just before serving.
To make the dressing, simmer the water and lemongrass in a small saucepan over a low heat until the water has reduced by a quarter. Remove from the heat and cool.
Remove the lemongrass and add the remaining ingredients. Whisk until combined.
