BRUSCHETTA WITH CHEDDAR, FRESH TOMATO AND SARDINE PASTE

Ingredients
2 Tbsp olive oil, to drizzle
1 shallot, finely chopped
3 cloves garlic, chopped
4 sprigs thyme leaves, finely chopped
1/2 cup white balsamic vinegar
4 tomatoes, chopped
2 Tbsp tomato paste
120 g sardines in tomato sauce
120 g sardines in tomato sauce
120 g sardines in tomato sauce
120 g sardines in tomato sauce
1 Tbsp butter
Salt and black pepper
240 g mature cheddar cheese, thickly sliced
Cooking Instructions
Heat olive oil in a saucepan; add shallots, garlic and thyme.
Reduce heat and cook until the shallots start to soften. Add vinegar to deglaze and add tomatoes. Turn heat up and cook until mixture has thickened and the pan is quite dry.
Add sardines with tomato and heat through. Remove from heat and cool down slightly.
Mix in a blender until smooth. Remove and push through a sieve into a pan. Cook again and reduce again to a thick consistency and add the butter.
Season to taste with salt and a little white pepper. Add a little lemon juice if you like. Place the toasted Bruschetta with cheese under the grill until melted. Serve with a smear of sardine paste.
