BAKED HONEY RICOTTA WITH GOLDEN KIWIS

Ingredients
3 Organic rooibos teabags
A handful Fresh mint, to serve
3/4 cup honey
200 g sugar for the egg whites
500 ml water
ricotta
Cooking Instructions
Bake 250 g ricotta at 200°C for 15 minutes.
Simmer 1 cup water, 200 g sugar, 2 T honey and 3 rooibos teabags for 15 minutes until syrupy, then strain.
Spoon over the ricotta and serve with golden kiwis and fresh mint.
