JAPIE SE GUNSTELING

Ingredients
  • 6 eggs, separated

  • 250ml white sugar

  • 62.5ml cake flour, sifted

  • 375 ml milk

  • 15ml lemon juice (about 3 small lemons)

  • 190ml orange juice

  • 30 ml soft butter

  • rind of 1 lemon, grated

Cooking Instructions
  1. Pre-heat the oven to 180ºC.

  2. Beat the egg yolks then fold in the sugar.

  3. Add the flour and milk alternately.

  4. Add the lemon juice, orange juice, grated lemon rind and melted butter.

  5. Beat the egg whites until stiff then fold into the mixture.

  6. Turn the batter into a greased, fireproof baking dish, place in a pan of hot water and bake for 45 minutes or until nicely browned. The pudding will form a delicate crust on top and a sauce underneath.
