SOUSKLUITJIES (CINNAMON DUMPLINGS)

Ingredients
2 extra-large eggs
30 ml soft butter
200 g flour
2 tsp baking powder
pinch of salt
2 tsp milk
1 litre cold water
2 Tbsp white sugar
1 cinnamon sticks
150 g butter
cinnamon sugar, for serving
Cooking Instructions
Before you make the dumpling batter, combine the water, sugar and cinnamon sticks in a medium saucepan/pan over medium heat.
In a large bowl, whisk the eggs well then add the melted butter.
Sift in the flour, baking powder and salt.
Add the milk and mix well.
When the syrup is warm but not boiling, place teaspoons of the batter into the liquid, ensuring not to over-crowd the pan as they expand quite a bit.
Cover the saucepan with a lid and allow the dumplings to steam for 5 minutes.
The dumplings are ready when they are firm to the touch.
Gently remove them with a slotted spoon and sprinkle over a little cinnamon sugar.
Continue with the remaining batter.
When all the dumplings have been cooked, increase the heat and add the butter to the syrup. allow to simmer for a minute or two then pour over the dumplings.
Serve immediately.
