CHOCOLATE CHUNK COOKIES

Ingredients
  • Dark chocolate

  • 2 tsp vanilla extract

  • 3/4 cup castor sugar, plus extra for dipping the pastry shapes

  • 1/2 cup Unsalted butter,at room temperature

  • 1 1/2 cups self raising flour

  • 3 free-range egg, beaten

Cooking Instructions
  1. Preheat oven to 180 C

  2. Beat butter, sugar and vanilla extract together in a bowl until light and creamy.

  3. Beat in the eggs, one at a time.

  4. Gradually fold in the flour and stir in the chocolate chunks.

  5. Place in the fridge for 15 minutes

  6. Take a heaped teaspoon of mixture and roll into a ball.

  7. Place on a greased baking tray and bake for approximately 15 - 20 minutes or until light golden brown.

  8. Cool for 5 minutes on the tray before transferring to a cooling rack.
