FRESH BLUEBERRY CHOCOLATE TRUFFLES

Ingredients
200 g 70% dark chocolate,melted
50g unsalted butter, cold and cut into small cubes
250 ml (1 cup) double cream
2 Tbsp cocoa powder
1/2 cup toasted desiccated coconut
1x125 g punnet blueberries, halved
Cooking Instructions
Gently heat the chocolate, butter and cream until smooth.
Cool in the refrigerator until it starts to set.
Place a little chocolate and a few blueberries in your hand and roll gently.
Toss the chocolate-berry ball in the cocoa powder and roll in the coconut.
To decorate, melt a little chocolate with a drop of water over a gentle heat.
Drizzle over the truffles.
