INGREDIENTS 1/3 cup basic slow cooker brisket 2 tbsp BBQ Sauce 1 large square of cornbread or bun 1/3 cup macaroni and cheese 2 tbsp sharp cheddar 1/2 tbsp chopped green onion
PREPARATION
1. Begin by slicing the cornbread in half and then toasting it under the broiler - this will help the sandwich stay together. Next toss your heated brisket with BBQ sauce and heat it up in a small sauce pan. Once the meat is piping hot, shape the brisket into a square and top with shredded cheddar. Add the lid to the pan and let the residual heat melt the cheddar. Next, take your cornbread out of the broiler and very carefully scoop the meat and melted cheese out of the pan and add it to one half.
Sprinkle on some of the green onions on top and smear the BBQ sauce onto the other piece of cornbread. Finish the sandwich by adding the remaining piece of bread. Serve immediately as the cornbread tends to get soggy and fall apart.
