STICKY MAPLE-GLAZED BBQ RIBS

Ingredients
sea salt and freshly ground black pepper, to taste
2 kg Pork ribs
3/4 cup maple syrup
2 cups water
2 tsp apple cider vinegar
4 Tbsp Worcestershire sauce
2 Tbsp tomato paste
2 tsp smoked paprika
2 tsp cumin seeds
1 Tbsp ground coriander
1 Tbsp ground cumin
1/2 cup canola oil
1 medium onion, roughly chopped
Cooking Instructions
Preheat the oven to 180°C. Season the ribs and roast for 90 minutes.
To make the marinade, fry the onion in the canola oil. Once caramelized, add the spices and fry for a few minutes until fragrant. Add the remaining ingredients, mix and reduce until sticky.
Remove the ribs from the oven and baste with the BBQ marinade. Return to the oven for 10 minutes, basting often until sticky and tender. Reserve a little marinade for serving.
