INGREDIENTS

FOR THE WAFFLES: 1 cup all-purpose flour 1 tablespoon granulated sugar 1 1/2 teaspoons baking powder 1/4 teaspoon salt 3/4 cup plus 2 tablespoons milk 3 tablespoons vegetable oil 1 egg

FOR THE FILLING:

Roastec chicken breast fillets, cubed

Torn iceberg lettuce

DIRECTIONS Combine all ingredients for waffles in a medium bowl just until smooth. Let sit for 5 minutes. Heat waffle iron according to manufacturer's directions. Grease iron, if desired. Ladle one quarter of the batter (about 1/4 cup) onto waffle iron. Close and cook until indicated by waffle iron (or when iron stops steaming). Remove waffle from iron and set on a plate. Repeat with remaining batter.

Top one half of the waffle with the filling and fold the waffle over like a taco.

Drizzle with your favourite dressing.
