Creamy Lemon Pasta with Chicken

Ingredients

1 pound penne or ziti 3 ounces goat cheese 1/4 cup heavy cream 1 small clove garlic, finely chopped 2 teaspoons grated lemon zest 1 tablespoon lemon juice 2 cups frozen peas, thawed 2 cups shredded, cooked, skinless chicken (from 1 small rotisserie chicken) Salt and pepper

Preparation

Bring a large pot of salted water to a boil over high heat. Add pasta and cook according to package directions. While pasta is cooking, place goat cheese, cream, garlic, lemon zest and lemon juice in a small bowl and mash with a fork to combine. Set aside 1/2 cup cooking liquid and drain pasta. Return pasta to pot and stir in peas, goat cheese mixture and chicken. Stir in cooking liquid. Season with salt and pepper and serve immediately.
