KERRIEBOONTJIES

2 kg gesnipperde groen boontjies 1 kg uie – gekap 1,25 liter asyn 10 ml borrie 15 ml sout 500 ml suiker 45 ml kerriepoeier 15-20 ml mielieblom

Opsioneel, ek gooi altyd ‘n blik perskes wat gesnipper is by en ‘n handvol rosyne –

Die rosyne kook ek saam met die uie en groen bone en die perskes gooi en by as ek alles bymekaar gooi en deurkook. Dit gee mooi kleur aan die boontjies.

Kook die boontjies en uie sag, maar nie pap nie. Meng die asyn, borrie, sout, suiker en kerrie saam. Plaas dit in ‘n groot kastrol en bring tot kookpunt. Voeg die boontjies en uie hierby en kook deeglik deur. Maak die mielieblom met bietjie water aan en voeg by. Roer terwyl dit verdik. Skep in warm, gesteriliseerde flesse.
