STUFFED ARTICHOKES CARCIOFI RIEPENI

Ingredients for 4 people:

8 artichokes 120 grams of grated stale bread 30 grams of grated pecorino cheese 30 grams of grated Parmesan cheese 70 grams of fresh diced provolone salt and pepper to taste extra virgin olive oil to taste a sprig of parsley a clove of garlic

Clean the artichokes and put them in acidulated cold water . In a bowl combine bread crumbs, chopped garlic and parsley, Pecorino, Parmesan, salt and pepper. Add oil, just enough to moisten the whole. Fill each artichoke with the stuffing and provolone. Place the artichokes in a pan and add a little water at the bottom with a few drops of lemon. Cover with foil: cook for 15 min and then move the pan for 5 minutes in a preheated oven at 220 degrees (baking with "grill" mode).
