Serves 4 - 6
3 cups water
2 tsp salt
4 cups Maize meal
Bring the water to a boil in a large, heavy-based pot. Add salt and then slowly add the maize meal, so that it piles up in the centre. Do not stir. Cover and simmer for 10 – 15 minutes. Stir with a fork until crumbly. Cover and simmer further for 20 – 30 minutes until cooked. The porridge should be crumbly.
