THREE-BEAN MACARONI BAKE

Ingredients
  • 50 g parmesan, grated

  • 400 g borlotti beans, drained

  • 400 g red kidney beans

  • 400 g chickpeas, drained and rinsed

  • 400 g Napoletana sauce

  • 250 g macaroni, cooked until al dente and drained

  • Sea salt and freshly ground pepper, to taste

  • 1 sprig Italian parsley, roughly chopped

  • 200 ml cheese sauce

Cooking Instructions
  1. Drain all the beans, including the chickpeas, and mix with the Napoletana sauce.

  2. You can buy Napoletana ready-made from Woolworths

  3. Heat through. Mix with the well-drained, hot, cooked macaroni.

  4. Check seasoning. Turn into an oiled baking dish. Sprinkle with parsley.

  5. Spoon over the hot cheese sauce and sprinkle with Parmesan.

  6. Slide under a hot grill to brown the top.
