CHRISTMAS PASTA ALFREDO

Ingredients
  • 4 Tbsp olive oil, to drizzle

  • 2 cloves garlic, minced

  • 4 red onion, thinly sliced

  • 250 g, cubed cooked gammon

  • 3/4 cup double cream

  • 4 sprigs fresh thyme, leaves picked

  • 50 g Parmesan, grated

  • 140g fresh peas

  • 250 g cooked al dente tagliatelle

  • sea salt and freshly ground black pepper, to taste

Cooking Instructions

  1. Heat the olive oil in a pan and fry the garlic until soft.

  2. Increase the heat and toss the onions and gammon in the saucepan for 3 minutes, then add the cream and thyme and simmer for 5 minutes until slightly reduced.

  3. Add the Parmesan and stir until smooth. Stir in the peas, add the drained pasta, toss to coat, season to taste and serve immediately.
