GREEN CHICKEN PASTA

Ingredients
250ml wholewheat pasta
4 free-range chicken breasts (skinned and boneless)
6 Tbsp olive oil, to drizzle
2 onions, roughly chopped
200g asparagus, chopped
1/2 cup baby broccoli, chopped
20 g parsley, roughly chopped
2 tsp thyme
30 g basil
1 pinch cardamom pods
1 dollop fat-free yoghurt
Cooking Instructions
Boil the pasta until al dente.
In a pan, fry the chicken breasts in olive oil until they start to colour.
Add the chopped onions, asparagus and baby broccoli. Add more oil if necessary.
Cover and cook for 4 minutes, then remove from the heat.
Season and add a pinch each of parsley, thyme, basil and cardamom.
Toss with the pasta and serve with a dollop of fat-free yoghurt or cream, if desired.
