SPAGHETTI WITH BOLOGNESE

Ingredients
1/2 onion, finely chopped
1 sweet pepper, chopped
2 carrots,roughly chopped
2 cups baby marrows, grated
150g butternut, chopped
1 x 400 g chopped Italian tomatoes
1 Tbsp garlic, chopped
2 tsp fresh parsley,finely chopped
1 handful of torn basil
2 cups dry white wine
1/4 cup white sugar
freshly ground black pepper
sea salt, to taste
500g beef mince
basil or flat-leaf parsley, to garnish (optional)
spaghetti, cooked al dente, for serving
parmesan, grated, for sprinkling (optional)
Cooking Instructions
Blend the vegetables, tomatoes, garlic, herbs, wine, sugar and seasoning.
Mix with the beef mince.
Turn into a suitable saucepan and simmer, half covered, over a medium to low heat, for 30 to 40 minutes.
Serve ladled over the cooked spaghetti with grated cheese on the side.
