KORIVIKARAM CHUTNEY

A spicy chutney from Andhra.

Ingredients

1 Kg Chilies

500 gm Salt

500 gm Tamarind

3 tbsp Ghee

50 gm red chilies

100 gm mustard

3 sprigs curry leaves

50 gm asafetida or hing

Method:

1) Soak tamarind pulp, red chilies and salt for 10-15 mins.

2) Grind the above mixture

3) Place the mixture in a pickle jar and allow it to rest for 3-4 days.

4) After 3-4 days, make a fine paste of the chilly

5) Heat oil add mustard, curry leaf, red chilies and hing and allow it to crackle.

6) Add the tempering into the paste and serve with steamed rice/ dosa
