This dish is good for the digestive system and used to be a home remedy for irritable bowel syndrome, it reduces the "pitha" and prevents premature greying of hair. Its best when eaten with hot steamed rice.

Pirandai is natural blood purifier ,it is used to cure the discomfort related to menopause , stomach infections and to reduce harmful cholesterol

Ingredients:

Pirandai - 1 cup Red chilli - 5-6 Urad dal - 3 tsp Mustard - ½ tsp Asafoetida - ¼ tsp Tamarind - small lemon size Salt - to taste

Oil - 2 tsp jaggery (optional)

Step 1 Wash the Pirandai, Remove the leaves and tendrils. Break the pirandai into manageable length you are comfortable to work with. Using a knife or a peeler, remove the veins along the ribbed edges

Step 2 Wash once again and chop them into finger length pieces. Soak some Tamarind in warm water

Step 3 Dry roast white sesame seeds and the other whole spices (red chilli, urad dhal )in little oil and keep aside to cool

Step 4 Saute pirandai in little oil, till it shrivels and changes color slightly . Let it cool completely

Step 5 Grind it with the whole spices to a smooth paste using very little water to a thogayal consistency or a bit thin if you want a chutney consistency.

Pirandai Thogayal is ready to eat. Spread hot, steaming rice on a plate, drizzle a tsp of ghee or sesame oil and add 2 tsp of this thogayal and mix well. Enjoy with a dry curry or any chips.
