Great side dish from karnataka
Ivy gourd has plenty of Vitamin B1 and B2, as also trace quantities of Vitamin A. All these vitamins are vital for the human body, and help in strengthening your immune system.
Ingredients:
ring gourd or tendli (ivy gourd) (chopped)
1 cup cashews
3 tbsp oil
1 tsp mustard
3 dry red chillies
curry leaves
1/2 tsp asafetida
1/2 cup grated coconut
Method:
1.Soak cashew nuts in warm water with little salt.
2.In a kadai, heat oil, add mustard and red chilies
3.Add curry leaf and asafetida and cook for a while.
4.Add the soaked cashew nuts and tindli and toss.
5.Add grated coconut and salt and mix.
Serve hot with steam rice and sambar.
