ARTICHOKES WITH BASIL

Ingredients
1 stick of celery
1 tomato
1 tsp Carrot, peeled and cut into match sticks
salt
1/2 fresh lemon leaves
15 glasses good chicken stock
5 glasses white wine
1 slice pork belly
1 garlic clove, finely chopped
1 onion, finely chopped
2 tbsp Basil olive oil
Cooking Instructions
To remove the hard, inedible parts of the artichoke, begin by turning them upside down. Rinse them in water laced with lemon juice to prevent them from becoming discoloured through exposure to air.
Finely dice the carrot, onion, celery, garlic and pork belly.
Drizzle some Basil olive oil in a pan and seal the artichokes. Add a pinch of salt.
Add the diced vegetables.
Sweat on a low heat for about 2 minutes.
Turn the heat up high again and deglaze with white wine.
Reduce a little.
Add the chicken stock and bring to the boil.
Lower the heat again and cover with greaseproof paper with a hole cut in the middle.
Simmer for about 10/15 minutes (to reduce the liquid by half).
Add the diced tomato and Basil olive oil at the end of cooking.
