ASPARAGUS AND ANCHOVIES PATATO OMELET

Servings: 1 Difficulty: easy Preparation time: 10 minutes Cooking time: 20+15 minutes
Ingredients 1 olive oil packed anchovies 150 g potatoes 1 egg 100 g green asparagus 1 glass of hot water
Cut the peeled potatoes in half lengthwise. Then slice the potato. Peel and chop the onion. Wash and cut green asparagus. Put potatoes, onions and asparagus into a bowl and mix them together. In a large pan heat the olive oil on medium high heat. Place the vegetables mixture into a large pan, spreading them over the surface. Add hot water. Leave in pan until the potatoes are cooked. Preheat oven to 180 degrees C. Crack the eggs into a mixing bowl and beat by hand with a fork. Pour in the vegetables mixture and mix together with a spoon. Add the anchovies and pPour into prepared monoportion oven casserole dish. Bake uncovered at 180 degrees C for 15 - 20 minutes. Serving hot.
