EGGPLANT MINI PIZZAS PIZZETTE DI MELANZANE

Ingredients: 2 eggplants 200 gr of mozzarella Ham Peeled tomatoes A clove of garlic Basil Cheese Extra Virgin Olive Oil Chilli Salt
Wash the eggplants and cut into slices, make them grill and add salt. Prepare the sauce in the traditional way with garlic, tomatoes, basil and (if you like) a pinch of chilli. Season with salt. Pour on a pan a little of sauce and arrange the eggplant slices, sprinkle with cheese on each slice, add a slice of ham, a slice of mozzarella and a bit of tomato sauce. Cover with other eggplant slices, a spoonful of sauce, mozzarella, extra cheese, a basil leaf and finish with a drizzle of olive oil; cook in the oven at 200° until the cheese is melt.
