GIUDIA ARTICHOKES

SERVINGS: 4 DIFFICULTY: easy PREPARATION TIME:10 minutes COOKING TIME:15/20 minutes
Ingredients: 4 globe artichokes salt pepper 1 lemon vegetable oil for deep frying
Directions: Fill a large bowl with cold water and the lemon juice. Reserve the lemon halves once squeezed. Wear disposable gloves or rub your hands with one of the squeezed lemon half. Cut the artichoke stalk at about 10 cm from the base and start plucking the outer leaves until you can see some light green at the base of the inner leaves. Using a paring knife start cutting the upper part of the leaves turning the artichoke around making sure you cut the upper part of the most inner leaves. Cut the dark green toughest part of the stalk and rub stalk and leaves with the squeezed lemon halves. Put the artichoke in the lemony water and proceed to prepare the other ones in the same way.
Once all the artichokes have been prepared put a saucepan on the stove and heat the oil. You will need quite a lot of oil, enough to cover the artichokes halfway up. Grabbing the artichokes by the stalk bang them a couple of times on a working surface. When the oil is hot, put the artichokes in the pan on a side making sure the stalk is submerged in oil, turn them and let cook until you can easily pierce the stalk with a fork. Drain and put on some kitchen paper, as soon as you can handle them open the leaves with a fork, season with salt and pepper and put the artichokes in the oil again head down. Let cook for a few minutes until the outer leaves are golden and crispy and the bases of the artichokes are tender. Drain on kitchen paper and serve hot.
