GLAZED CARROTS CAROTE GLASSATE

Ingredients 2 large carrots 1 teaspoon of granulated sugar 1 large knob of butter a few sprigs of parsley, chopped salt pepper

Method Peel the carrots, cut them diagonally into 2 cm pieces and cook them in lightly salted simmering water for about 10 minutes. Heat a frying pan and add the butter, when it begins to foam add the carrots and toss to coat them well in butter. Sprinkle with sugar, a pinch of salt and sauté the carrots for a few minutes until the flavours are well blended. Add the parsley, season with a some freshly ground black pepper and serve.
