GRILLED MUSHROOMS AND MOZZARELLA TEGLIA DI FUNGHI E MOZZARELLA

Ingredients: • handful of cremini mushrooms • 1 ball of mozzarella cheese • 2 tbsps basil pesto • 2 tbsps sundried tomato pesto • extra virgin olive oil • salt
Method: Drizzle some oil over an oven dish. Clean the mushrooms and cut them in ½ slices. Put the mushroom slices in the dish, season with a little salt, and drizzle with the pesto and the sundried tomato pesto. Add the mozzarella cheese cut in slices and then thorn. Grill for 10 minutes or until the cheese is melted and the mushrooms are cooked. Serve with rustic bread. This dish could become the main ingredient for a delicious bruschetta if the bread is sliced, toasted and scented with some garlic while still hot. …..
