PUMPKIN AND ZUCCHINI IN SCAPECE ZUCCA E ZUCCHINE IN SCAPECE

Ingredients for 4 people:

4-5 kg of medium zucchini 1 slice of pumpkin “Napoletana” ca 500gr Olive oil 150-200 ml white vinegar or red vinegar 2 cloves of garlic salt fresh mint

Method: Cut the zucchini into slices of 4-5 mm, put them in a colanders sprinkled with salt and let lose the water for a couple of hours, after this time rinse under water and dry well. Meanwhile, cut the pumpkin into slices of about 5 mm. Fry little at a time zucchini and pumpkin in olive oil and when ready place them on a paper towel. Meanwhile, in a small saucepan, heat the vinegar with garlic and a few tablespoons of oil in which you fried zucchini and pumpkin. Put the vegetables in a serving dish, season with salt, sprinkle with sauce made of vinegar and a few leaves of mint
