HERB CRACKERS 3 tbsp. shortening 2 tbsp. butter About 3 1/2 c. flour 1 tsp. baking powder 1/4 tsp. sugar 1 egg white, beaten to loose froth 1 c. whole milk 1-2 tbsp. chopped chives or rosemary
Melt shortening and butter together. Cool. Sift 2 cups flour, baking powder and sugar in bowl; make well in flour, and pour in melted ingredients; stir to combine, then stir in egg white. Add milk and beat vigorously to smooth out lumps. Add herbs. Gradually add enough flour to make a stiff dough. Form into ball and knead 10 minutes on flour surface. Divide equally and wrap in wax paper and let rest at room temperature 20 minutes. Roll out on floured surface as thin as possible, cut with pizza cutter. Place on ungreased cookie sheet. Sprinkle with salt if desired. Prick with fork a few times. Bake at 375 degrees for 15-20 minutes until brown.
