SPICY CHICKEN LETTUCE WRAPS

Ingredients
4 free-range chicken breasts (skinned and boneless) 2 tsp smoked paprika 2 tsp dried oregano 1/2 tsp coriander, ground 1 tsp dried chilli flakes(optional) salt 1 lemon, cut into 8 slices for garnishing 3 Tbsp olive oil, to drizzle gem lettuce leaves, for serving guacamole 1 jar chunky salsa sour cream, to serve
Cooking Instructions
Slice the chicken into thin strips and place in a bowl. Add the herbs, spices, lemon juice and oil and mix well. Allow to marinade for up to 2 hours but no less than 15 minutes. Fry the chicken in a hot pan until golden brown and cooked through. Serve in lettuce leaf ‘boats’ with guacamole, salsa and sour cream.
