CARB CONSCIOUS MINESTRONE

Ingredients
4 rashers streaky bacon, chopped 1/2 onion, finely chopped 2 cloves garlic, finely sliced 4 Tbsp olive oil 4 large courgettes, cubed 200g brown mushrooms, sliced 1 large red pepper, deseeded and sliced 1 400g tin chopped tomatoes 2 Tbsp tomato paste 1 bay leaf 2 sprigs fresh rosemary, leaves picked and chopped 3 sprigs thyme 15 glasses good chicken stock sea salt and pepper to taste pesto, for serving Parmesan, for serving
Cooking Instructions
In a large pot, fry the bacon until the fat has rendered and the bacon is crisp. Remove from the pot, leaving the fat behind. If necessary add a little olive oil then saute the onion until soft and translucent. Add the garlic and vegetables and saute until golden brown. Add the chopped tomatoes, tomato paste, herbs and stock and lower the heat. Allow to simmer gently for 15-20 minutes until all the vegetable are cooked. Season to taste then serve with a dollop of basil pesto and grated parmesan cheese.
