CITRUS FLAVORED HONEY

1 (16 oz.) jar light colored honey Zest of 2 lemons or oranges, cut in spirals or julienne strips In saucepan, stir honey over medium heat until warmed through. Place zest in heat-proof jar. Pour in honey. Cool. Cover lightly. Let stand at least 1 week. Serve on smoked meats or in fruit salad dressing or iced tea.

HERB HONEY: Same as above except use series of herbs, such as mint, thyme or rosemary or candied ginger. Good on biscuits or as a glaze when baking or grilling meat.

BERRY FLAVORED: Same as above, stir in 1/2 cup fresh raspberries or strawberries. Stand for 3 days, refrigerate. Good on nut bread, waffles or pancakes.
