CRUMPETS

1 1/2 c. milk 1 c. water 2 tsp. honey 1 pkg. active dry yeast 3 c. flour 1 tsp. salt 1/2 tsp. baking soda 2 tbsp. butter, melted
In saucepan heat milk and 3/4 cup water to boiling. Pour mixture into a large bowl and cool to 115 degrees. Add honey and yeast. Let stand 5 minutes. Beat flour and salt into mixture until well combined. Cover bowl and let batter rise until double in size - 1 hour. Stir together remaining 1/4 cup water and baking soda. Beat into batter. Let batter rest, covered, 5 minutes.
Brush griddle with melted butter and heat over medium heat. Pour 1/4 cup batter onto griddle and cook 4 minutes (or until lightly browned) then turn over and lightly brown other side. Serve warm with jam or homemade Devonshire Cream.
DEVONSHIRE CREAM: Beat 1 (8 ounce) package of cream cheese, softened, until fluffy. Beat in 1/2 cup sour cream and 2 tablespoons confectioners sugar, until well mixed.
