Crumpets on a stick

1 c. all-purpose flour 1 pkg. dry yeast 2/3 c. milk 1 tbsp. butter 1/4 tsp. salt 1 egg 1/4 c. butter
Crumpet rings, crumpet rings can be made by cutting the bottoms out of tuna fish cans. In a small bowl combine 1/2 cup of the flour and the yeast. In a saucepan heat milk, 1 tablespoon butter and salt until just warm stirring constantly. Add to dry ingredients in bowl; add egg. Beat at low speed for 1 minute, scraping the sides of the bowl. Stir in remaining flour, beat until smooth. Cover and let stand for about 1 hour until double in bulk.
In a large skillet or on a griddle (an electric frying pan works good) melt half the remaining butter. Lightly brush the crumpet rings with butter. Place on the pan or griddle. Pour 2 tablespoons batter in each ring. Cook over medium heat until the crumpets are brown on one side, 4 or 5 minutes. Remove ring and turn and cook 4 or 5 minutes longer. Repeat until all batter is used. Makes about 8 crumpets.
