Herb butter and olive oil cubes

HERB BUTTER 1/2 lb. butter 1/3 c. chopped herbs, including parsley & chives with sm. amounts of thyme, dill, basil, oregano or rosemary
Place butter in bowl to soften at room temperature. When soft, mix in the herbs until thoroughly blended. Wrap in waxed paper and refrigerate.
HERB INFUSED OLIVE OIL 1 c. best quality extra virgin olive oil 2 cloves garlic, peeled 10 black peppercorns 1 sprig fresh rosemary, basil or sage
Place all ingredients in a covered jar or cruet. Let sit overnight at room temperature. Serve with crusty bread for dipping.
Freeze infusion in ice moulds and use in stirfries.
