HOT CHEESE PITA POCKETS

HOT CHEESE PITA POCKETS 8 tomato slices 2 whole wheat pita bread, cut in half 1/4 lb. Velveeta cheese 1/4 lb. roast beef slices, cut in strips 1/2 c. broccoli flowerets 1/4 c. bean sprouts 1/4 c. carrots, shredded 1 tbsp. green onion slices 1/2 c. yogurt, plain 2 tsp. spicy brown mustard
Place tomato slices in pita bread. Toss together cheese, roast beef, broccoli, bean sprouts, carrots and green onions. Fill each pita with 1/2 cup vegetable mix. Microwave on High for 3 to 5 minutes or until cheese begins to melt. Serve with yogurt and mustard. I like to mix the yogurt the mustard in with the veggie mixture.
