LENTIL, CORIANDER & CHILLI SALAD

Ingredients
2 x 400 g cans lentils, drained and rinsed 200 g cauliflower florets 2 red chillies, seeded and finely chopped (optional, to serve) A handful coriander, chopped 2 Tbsp chives 4 Tbsp olive oil, to drizzle sea salt and freshly ground black pepper, to taste 1 dollop fat-free yoghurt
Cooking Instructions
Add the lentils, cauliflower, chilli, coriander and chive, lemon juice and olive oil to a bowl and mix to combine. Season to taste, drizzle over the Greek yoghurt and serve.
