STEAMED MUSSELS WITH WHITE WINE, GARLIC AND CHILLI

Ingredients
1/2 medium onion, finely chopped 4 cloves garlic cloves, finely chopped 1 small fresh red chilli, finely chopped for serving 2 kg fresh mussels, in their shells 1/4 cup white wine 1/2 fresh lemon leaves
Cooking Instructions
In a large pot, fry the onion until soft then add the garlic and chilli and saute for a few seconds before adding the mussels, white wine and lemon juice. Cover and allow to cook for 10-15 minutes until all the mussels are open. (Discard any mussels that didn’t open during cooking.) Serve the mussels with fresh, crusty bread to mop up the juices.
