SWEETHEART CUPCAKES RED VELVET PART: 1 1/2 c. sugar 1/2 c. Crisco 1 c. buttermilk 1 tsp. vanilla 2 eggs 1 tsp. vinegar 2 tbsp. baking soda 2 oz. red food coloring 2 tbsp. cocoa 2 1/2 c. sifted cake flour 1 tsp. salt Cream together sugar and Crisco. Dissolve baking soda in vinegar. Add buttermilk, vanilla, eggs and vinegar/baking soda mixture to sugar/Crisco mixture. Mix food coloring with cocoa or butter. Add to first mixture. Then add flour and salt slowly.
CREAM CHEESE FILLING: 1/3 c. sugar 1 (8 oz.) cream cheese, softened 1 egg 1 tsp. vanilla Cream together sugar and cream cheese. Mix together all ingredients and add miniature chocolate morsels, if desired. Put 2/3 cup Red Velvet batter in cupcakes and 1/3 of Cream Cheese filling on top. Bake at 350 degrees for 15 minutes or until toothpick comes clean.
For cake, put Red Velvet part on bottom and marble Cream Cheese filling on top. Bake at 350 degrees for 45 minutes.
