GAZPACHO

GAZPACHO 1 1/2 pounds tomatoes, ripe, peeled 3 cloves garlic 1 onion 1 carrot 1 small cucumber 1 green bell pepper, seeded and quartered 2 sprigs parsley 4 tablespoons chopped fresh basil juice of 1 or 2 lemons salt and pepper to taste 4 cups V-8 juice
Combine all ingredients in a blender or food processor. Chill several hours before serving. Adjust seasonings to taste. Can be served hot or cold. Easy to prepare and great for hot summer nights.
