THAI PORK WITH GARLIC AND BLACK PEPPER

3 tbsp. peanut or vegetable oil 4 tbsp. peeled & finely chopped garlic 1 lb. boneless pork roast, butt or loin, very thinly sliced 2 tbsp. Thai fish sauce or 2 tbsp. soy sauce + 1 tsp. salt 1 tsp. freshly ground black pepper or more if desired 1 tbsp. chopped fresh coriander stems (opt.)
Heat a wok or pan and add the oil. Saute the garlic for a moment and add the pork. Cook for 3 to 5 minutes (on medium heat) and then add the remaining ingredients. Stir for 2 minutes and serve with rice.
