WHOLE WHEAT BUNS 2 cups milk 1/2 cup molasses 1 1/2 teaspoons salt 1 pkg active dry yeast 1/4 cup lukewarm water 2 tablespoons butter 3 cups whole wheat flour 3 to 4 cups bread flour
Scald milk, add molasses and salt. Cool to lukewarm. Dissolve yeast in lukewarm (not hot) water. Let sit 5 minutes, then stir into milk mixture.
Add whole wheat flour, mixing in well. Add melted butter.
Stir in enough bread flour to make a very soft dough. Cover and set in a warm place until doubled in bulk.
Stir down and allow to rise again for 30 minutes.
Shape into buns and let rise until light. Bake in a preheated 425F oven for 10-15 minutes, or until lightly golden brown on top and the rolls are light.
